Yogurt Banana Bread

INGREDIENTS

1/3 cup noosa Vanilla Bean Yoghurt
1 3/4 cups flour
1 teaspoon baking soda
Pinch of salt
3/4 teaspoon ground cinnamon
1 stick butter, softened
1/2 packed dark brown sugar
2 room temperature eggs
1 cup Walnuts
1/3 cup noosa Vanilla Bean Yoghurt
3 1/2 large overripe bananas for mashing
1 1/2 teaspoon vanilla extract
Drizzle: Honey

STEPS

  1. Preheat the oven to 350°F.
  2. Use nonstick loaf pan or prep 9×5-inch pan with nonstick spray.
  3. In large bowl, whisk dry ingredients including flour, baking soda, salt, and cinnamon together.
  4. With mixer, beat brown sugar and butter until smooth. Once smooth beat in eggs until completely combined and creamy. Next, beat in noosa Vanilla Bean Greek Yoghurt, mashed banana, and vanilla extract until combined.
  5. Slowly beat dry ingredients into wet ingredients until completely mixed with no visible flour pockets.
  6. Spread batter into baking pan and bake for 1 hour, or until top is golden and toothpick comes out clean from center.
  7. Once pulled from the over, allow bread to cool completely before removing from pan or slicing.
