Sweet Potato Marshmallow Casserole

1/2 cup noosa honey yoghurt
3 pounds peeled and cubed sweet potatoes
1 cup dark brown sugar
1/2 cup coconut oil, softened
2 teaspoons salt
1 teaspoon vanilla extract
2 cups normal sized marshmallows
Optional: ¾ cup pecans
- Preheat oven to 350 Degrees.
- Cook sweet potatoes in boiling water on stove, reduce heat and simmer for 10
minutes or until thoroughly cooked.
- Place potatoes in bowl. Stir in noosa and next 4 ingredients. Spray baking dish and transfer mixture into dish.
- Top with pecans and marshmallows, bake for 25 minutes or until golden brown.
