Sweet Potato Marshmallow Casserole

INGREDIENTS

1/2 cup noosa honey yoghurt
3 pounds peeled and cubed sweet potatoes
1 cup dark brown sugar
1/2 cup coconut oil, softened
2 teaspoons salt
1 teaspoon vanilla extract
2 cups normal sized marshmallows
Optional: ¾ cup pecans

STEPS

  1. Preheat oven to 350 Degrees.
  2. Cook sweet potatoes in boiling water on stove, reduce heat and simmer for 10
    minutes or until thoroughly cooked.
  3. Place potatoes in bowl. Stir in noosa and next 4 ingredients. Spray baking dish and transfer mixture into dish.
  4. Top with pecans and marshmallows, bake for 25 minutes or until golden brown.
